Daniel's Mother's Portuguese Rice Recipe

Ingredients

• 1/4 cup olive oil
• 3/4 pound linguiça sausage, cut into 1/8-inch coins on a diagonal
• 1 cup red bell pepper, finely chopped
• 1 cup white onion, finely chopped
• 1 teaspoon kosher salt
• 1 teaspoon freshly ground black pepper
• 1/2 teaspoon red pepper flakes
• 1 tablespoon smoked paprika
• 1 can (6 ounce) tomato paste
• 3 cups chicken stock
• 8 ounces raw long-grain white rice,(1 cup)
• 2 dried bay leaves
• 1/4 cup fresh parsley,minced
