Cheese and pear Fiocchi® with winter fruit salad, spiced orange and cinnamon caramel and parmigiano gelato

Ingredients

• 300 g approx. cheese and pear Fiocchi®
• approx. 400 g dried fruit of choice (apricots, sultanas, figs, goji, etc.)
• seed oil for frying, to taste.
• 200 g caster sugar
• 40 g water or ice
• zest without white part of one orange
• 2 cloves
• 1 small cinnamon stick
• 500 g fresh cream
• 120 g brown sugar
• 120 g Parmigiano Reggiano
