Ingredients

• 1 tablespoon unsalted butter
• 2 large leeks, white and pale green parts only, cleaned and sliced
• 3/4 cup grated Gruyere cheese
• 1/4 cup grated Parmesan cheese
• 4 eggs
• 1 cup whipping cream or half-and-half
• 2 tablespoons minced fresh tarragon or 1 tablespoon dried, crumbled tarragon
• salt and freshly ground black pepper
