Jammy Peach Upside Cake

Ingredients

• 2 ripe white peaches
• 2 ripe yellow peaches
• 1 ⅓ cup (263g) sugar, divided
• 1 ⅓ cups (156g) cake flour
• ½ cup (82g) corn flour*
• 2 tsp baking powder
• ½ tsp salt
• 3 Tbsp (40g) milk (any milk will do!)
• 1 tsp vanilla extract
• 3 large eggs
• ¼ cup heavy cream
• 1 Tbsp sugar (more to taste)
• Pinch salt
• ½ tsp vanilla
• 3 Tbsp creme fraiche
