• 50g butter
• 2 leeks, finely chopped

• 1 chilli, deseeded and finely chopped
• 1 butternut pumpkin (1.3kg), peeled, seeds removed, cut into cubes
• 300g celery stalks, diced
• 300g Swiss brown mushrooms, left whole if small and halved if larger
• 300g frozen baby peas
• 1 tbsp stock powder
• 300ml dry apple cider
