Ingredients

• 2 large potatoes, thinly sliced with a mandolin
• 1l vegetable oil, for frying
• 1 tbsp black pepper, coarse
• 1 tbsp flaky sea salt
• 1 shallot, finely chopped
• 2 garlic cloves, minced
• 1/2 tbsp peppercorns, crushed
• 120ml brandy
• 30g unsalted butter
• 120ml double cream
• 1/4 tsp sugar
• big pinch salt
• 1 large rib eye steak
• 1 crusty baguette
• 1 head red chicory
• 1/2 red onion, thinly sliced
• handful lambs lettuce
• 1 lemon, juice
• salt, to taste
• 2 tbsp extra virgin olive oil
