A New Orleans favourite, this simple one pot jambalaya with no seafood is so easy to make, even on a busy weeknight!
Ingredients
- 2 Tbsp. Olive Oil (extra virgin)
- 2 Ribs Celery (chopped)
- 1 Yellow Onion (diced)
- 1 cup Green bell pepper (or a mix of red, yellow, and green!, diced (approximately 1 large bell pepper))
- 3 cloves Garlic (minced)
- 8 oz. Chicken breasts (cubed)
- 12 oz Andouille (Smoked Sausage, sliced)
- 1 cup Chicken Broth
- 2 14 oz. can Crushed Tomatoes
- 2 cups Brown Minute Rice (uncooked)
- 1 - 3 Tbsp. Cajun or Creole seasoning (to taste)
- Salt and Pepper to taste
