Ingredients

• 3 potatoes, peeled and cubed
• 1 sweet potato, peeled and cubed
• 250g piece beef topside
• 3 tablespoons olive oil
• 1 head of garlic
• 2 tablespoons butter
• 1 red onion, cut into wedges
• 1 tablespoon balsamic vinegar
• 1 teaspoon muscovado
• 1 1/2 cups baby spinach
• 2 rosemary sprigs
• 2 tablespoons roughly torn basil
• juice 1 lemon
• 200g Greek feta, crumbled
