Apple and Date Salad - Click 'N Cook

Ingredients

• 3 tablespoons red wine vinegar
• 1/4 cup honey
• 2 teaspoons Dijon mustard
• 1/4 teaspoon ground cinnamon
• 5 tablespoons olive oil
• 4 cups baby spinach (or salad green of choice, like arugula or spring mix)
• 2 medium apples cored and thinly sliced
• 1/2 cup pitted and chopped dates (or raisins)
• 1/2 cup chopped walnuts
• 1/2 cup crushed matzo crackers for serving
