Sourdough Olive bread - Sourdough
This was a first attempt at making a sourdough olive bread, and I think still needs some tweaking.The olives are added using the 'laminating
Ingredients
- strong white flour 400 grams
- rye 50 grams
- w/meal flour 50 grams
- leaven 200 grams
- water (lukewarm) 325 grams
- 1/2 tsp dried barley malt 4 grams
- salt 9 grams
- 1 tablespoon olive paste/tapenade 18 grams
- 1 teaspoon fresh rosemary finely chopped 7 grams
- Black kalamata olives (pitted) 180 grams
