Ingredients
- 1¼ cups yellow split peas
- 1 large onion, chopped
- 10 cups chicken or vegetable stock
- ¼ cup olive oil
- 1 teaspoon cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon saffron, (optional)
- 6 cups (about 3/4 pounds) peeled, seeded, and cubed pumpkin (you can use butternut or another winter squash)
- Salt and pepper to taste
- Parsley for garnish, minced
