A great chicken tagine made with chicken and with a little added flavour and spice from the keralan lemon pickle.
Ingredients
- 3 tbsp Olive Oil
- 2 Large Onions
- 3 3 cloves Garlic
- 1 tsp Ground Cumin
- ¼ Cinnamon Stick
- 20 20 Saffron Threads
- 300 ml Chicken Stock
- 8 Chicken Portions
- 4 tbsp Keralan Lemon Pickle
- 100 g Green Olives
- ¼ cup Flatleaf Parsley
- ½ cup 1/2 cup Coriander
