  • 5 cups vegetable broth
  • 1 cup dry white wine, such as Chardonnay
  • 1 small lemon (scrubbed to remove any waxy coating, then thinly sliced and seeded)
  • 4 or 5 fresh dill fronds
  • 1 teaspoon black peppercorns
  • 1 bay leaf
  • One 2- pound skin-on salmon fillets
  • 1/2 cup regular or low-fat mayonnaise
  • 1/2 cup regular or low-fat sour cream
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons minced dill fronds
  • 2 tablespoons jarred prepared white horseradish
  • 1 tablespoon minced chives or scallions ((green part only))
  • 1/2 teaspoon ground black pepper
