• 2 tablespoons unsalted butter, melted and cooled
• 1 large egg
• 1 cup buttermilk
• 1 cup fresh corn, coarsely chopped
• 1/4 cup finely chopped onion
• 1/4 cup finely chopped red bell pepper
• 1 fresh jalapeño, seeded and minced (or to taste)
• 1 cup coarsely grated Pepper Jack cheese
