Adriatic Eel Stew | Saveur

- 1 medium yellow onion, peeled and chopped
- 3 medium shallots, peeled and chopped
- <sup>1</sup>⁄<sub>4</sub> cup tomato paste
- 1 large bunch scallions, trimmed and chopped
