Fuerteventura Recipe: Cannelloni of SEITAN with cauliflowerbéchamel.

Ingredients

• 1 pack of SEITAN (or veggie mince, soya etc)
• 2 onions, finely cut
• 2 bulbs of garlic, finely cut
• 3 carrots, finely grated
• 2 cups of mushrooms, sliced
• 3 spoons of lightly roasted pine nuts
• Laurel (bay leaves), parsley, soy sauce, olive oil
• Cannelloni Pasta – either sheets or ready rolled
• 1 onion, finely cut
• 1 small cauliflower cut into florets
