Ingredients

- 1 Eggplant cut in 1/2 inch pieces with the skin on.
- 1 Onion, sliced thick
- 1 Cup Red Potatoes cut in 1/2 inch pieces
- Handful of Cherry Tomatoes, halved
- Scallions, sliced
