Coastal Aubergine Bake – Barber's
Barbers Coastal Cheese aubergine bake, an ideal warming dish for a grey day. Can be served as a side or a main dish.
Ingredients
- 3 aubergines
- 1tbsp olive oil
- 1 onion, finely diced
- 2 cloves of garlic sliced
- 2 tins of chopped tomatoes
- A small bunch of basil, leaves chopped
- 180g Barbers Coastal cheddar, grated
- 2 handfuls of breadcrumbs
