Ham Recipes NZ: Smokey Ham, Bean and Winter Greens Soup

Ingredients

• 3 tbsp olive oil
• 1 onion finely chopped
• 2 sticks celery finely chopped
• 1 carrot peeled and roughly chopped
• 2 parsnips peeled and roughly chopped
• 2 garlic cloves peeled and thinly sliced
• 1 bay leaf
• 2 sprigs of thyme
• 1 litre salt reduced chicken stock
• 2 tins cannelloni beans rinsed
• 1 pack Hellers Ol Smokey Ham off the Bone roughly chopped
• 5 large silver beet leaves destalked and roughly chopped
• Sea salt and cracked pepper
• Fresh herbs to garnish – tarragon, italian parsley
