• 3 bunches lacinato kale or Tuscan kale, ribs removed and coarsely chopped
• 3 tablespoons olive oil
• 1 teaspoon salt
• 1 teaspoon pepper
• 1/3 cup grated SarVecchio Parmesan cheese
• 1 cup croutons
• 1/4 cup shaved Sarvecchio Parmesan cheese
