• Olive oil to taste
• 1 clove garlic
• 2 cucumbers
• 6 mini sweet peppers in assorted colours
• 1/2 small red onion
• 1 cup watercress leaves
• Vinegar to taste
• Salt to taste
• Black pepper to taste
