Ingredients

• 1 medium green bell pepper, chopped
• 1-pound chicken breast, boneless and skinless, cut into small pieces
• 1 teaspoon chili powder
• 1 teaspoon cumin
• 1 teaspoon smoked paprika
• 1/2 teaspoon garlic powder
• salt, to taste
• pepper, to taste
• 1 (15-ounce) can black beans, drained and rinsed
• 3/4 cup corn kernels, drained and rinsed if canned
• 8 large tortillas
• 2 cups Monterey Jack cheese, shredded
• 1 cup cheddar cheese, shredded
