• 2 tbsp olive oil
• 1 medium onion
• 2 cloves garlic
• 1 tsp ginger
• 2 tbsp curry powder
• 750 mL vegetable or chicken broth
• 400 mL coconut milk
• 1.2 kg pumpkin
• ½ tsp dried thyme
• toasted pumpkin seeds for topping
