Spicy Tomato Soup with Basil Pesto - Auntie Chatter

Ingredients

• 6 – 8 medium/large tomatoes, olive oil
• 1 head of garlic, cut top off so all the cloves are exposed, drizzle with olive oil
• 2 TB olive oil
• 1/2 large, sweet onion, roughly chopped
• two celery ribs
• 1 bell pepper – red, yellow or orange
• 2 cups chicken or vegetable stock
• 3-4 cloves of roasted garlic
