Ingredients

• 750g boneless white fish fillet, cut into 2cm chunks
• 2 tsp fish sauce
• 100g ghee
• 2 leeks, sliced
• 2 brown onions, sliced
• 6 garlic cloves, sliced
• 1/2 bunch thyme, leaves picked
• 1 1/1 Tbsp plain flour
• 600ml thickened cream
• 1/4 tsp ground nutmeg
• Sea-salt flakes and freshly ground black pepper, to season
• 4 medium potatoes, cut into 1cm dice
• 4 hard-boiled free-range eggs, chopped
• 2 sheets puff pastry, thawed
• 1 free-range egg, lightly beaten
