Irish Pride

Ingredients

• Packet Irish Pride Burger Buns
• About 12 shitake mushrooms chopped
• 1 red onion, finely chopped
• 6 spring onions, thinly sliced
• 4 garlic cloves, finely chopped
• 1 large red chilli, finely chopped
• 1 tsp Paprika
• 1 tin black beans, drained and rinsed
• 1 large free-range egg, beaten
• 100g fresh breadcrumbs
• Handful of fresh parsley, finely chopped
• Juice of ½ lime
• 150g feta, crumbled
• 50g grated cheddar cheese
• guacamole (Marks & Spenser have nice tubs)
• sliced tomatoes & sour cream to serve
