  • 1.5kg lamb shoulder, bone in
  • 2 tbsp of sunflower oil
  • 1 tbsp of cumin seeds
  • 1 tbsp of fennel seeds
  • 1 tbsp of sea salt
  • 3 sticks of celery, roughly chopped
  • 4 carrots, peeled and roughly chopped
  • 1 onion, roughly chopped
  • 4 bay leaves
  • 10g of thyme
  • 1 garlic bulb
  • 1.5kg Maris Piper potatoes
  • 1 tbsp of fine salt
  • 50g of black garlic paste
  • 200g of yoghurt
  • 1 pinch of salt

  • 150g of green beans, trimmed
  • 150g of sugar snap peas
  • 1 tsp sunflower oil
  • 40g of wild garlic
  • 40g of wild leek leaves
