RISOTTO ai FUNGHI PORCINI Porcini Risotto

Ingredients

• 1-1/2 pounds porcini mushrooms, wiped with a damp cloth and sliced
• 1/4 cup extra-virgin olive oil
• 1 medium red onion, finely chopped
• 3 gloves garlic, minced
• 2-1/2 cups Carnaroli or Arborio rice
• 1/2 cup dry white wine
• 5 - 6 cups light beef broth, simmering on the stove
• 1 tablespoon chopped fresh Italian parsley
• 1/2 cup Parmigiano Reggiano
• 2 tablespoons unsalted butter
• Kosher salt
• Freshly ground black pepper
