• 150g 70% dark chocolate, chopped
• 75ml double cream
• 5 large egg whites
• Pinch of salt
• 400g unsalted butter, softened
• 1 tsp vanilla paste
• 1 tbsp white rum
• ½ ripe mango
• Juice and finely grated zest of ½ unwaxed lime
