Ingredients

• 1 tablespoon olive oil
• 1 onion, diced medium
• 1 stalk celery, diced medium
• 1 medium carrot, diced medium
• 1/3 head green cabbage, coarsely chopped
• 1 large russet potato, peeled, diced medium
• 1 bay leaf
• 1 teaspoon dried thyme
• 1/2 lb smoked sausage such as kielbasa, sliced
• 4 cups chicken broth
• sea salt and black pepper to taste
• handful chopped parsley
