Ingredients

• 1 cup oil
• ¾ cup castor sugar
• ¾ cup brown sugar
• 4 extra large eggs
• 1 teaspoon vanilla essence
• Pinch salt
• 2 cups flour
• 2 teaspoon baking powder
• 1 teaspoon mixed spice
• 2 teaspoon cinnamon
• 1 cup chopped pecans
• 4 to 5 large carrots finely
