Carrot Cake recipe by Juwariyyah Tar

Ingredients

• 3 Eggs
• 1 cup castor sugar
• 1 cup oil
• 3 teaspoon baking powder
• 1 ½ cups flour
• 2 teaspoon cinnamon
• Pinch of salt
• ½ teaspoon bicarbonate of soda
• 2 cups grated carrots
• ¾ cup chopped pecan nuts
• ¼ cup water
• Add oil and beat well. Soft dry ingredients and add to batter
• Add carrots and nuts
• Cream cheese icing
• 1 tub cream cheese- softened
• 115g butter
• 1 cup sifted icing sugar
• 3 teaspoon lemon juice
• 1 teaspoon vanilla essence
