  • 1 cup peeled and coarsely grated carrot
  • ½ red bell pepper, seeded and diced
  • 6 sheets phyllo pastry dough, thawed if frozen, cut into twelve 9-inch squares
  • 1 to 1½ teaspoons sweet chili dipping sauce, plus extra to serve (or ketchup, if preferred)
  • sunflower or vegetable oil, for brushing
  • 1½ cups cooked basmati rice (use bought cooked, leftovers or freshly cooked)
  • 3½ ounces cooked shelled shrimp
