Easy sausage casserole - Lemon Squeezy
This one-pot is a great winter warmer. It takes just 15 minutes prep time - and there’s the added bonus of less washing up!
Ingredients
- 8 good quality, free range sausages
- 1 butternut squash
- 4 sweet potatoes
- 2 leeks
- 400 g tin chopped tomatoes
- 1 clove garlic
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 200 ml vegetable stock
- 1 bay leaf
- Sea salt
