Candied Ginger Marshmallows - Choperella
Pillowy soft marshmallows with just the right amount of candied ginger. They melt beautifully into hot chocolate adding a hint of spice as well.
Ingredients

- 1 cup water, divided
- 2 packets gelatin (I used Knox brand)
- 1 ½ cups sugar
- 1 cup white corn syrup
- 1 tsp salt
- 1 tsp ginger syrup, from candied ginger (optional)
- ½ tsp ginger powder
- ¼ cup finely chopped candied stem ginger preserved in syrup
