Ingredients

  • 250 g cherry or baby roma tomato, halved
  • 1 Lebanese cucumber, chopped
  • 1/2 -1 red onion or spring onion, chopped
  • 1 red capsicum roasted, sliced.I used 4 baby caps. (drizzle with oil and bake at 220 for 10 -15 mins)
  • 10 olives, pitted and halved
  • Handful parsley, chopped
  • 1 tsp oregano
  • 400g tin Lentils , rinsed and drained well
