Ingredients: 250 g cherry or baby roma tomato, halved; 1 Lebanese cucumber, chopped; 1/2 -1 red onion or spring onion, chopped; 1 red capsicum roasted, sliced.I used 4 baby caps. (drizzle with oil and bake at 220 for 10 -15 mins); 10 olives, pitted and halved; Handful parsley, chopped; 1 tsp oregano; 400g tin Lentils , rinsed and drained well; Feta; 1 garlic clove, crushed (optional); 1 1/2 T Dijon Mustard; 1 T Honey, or less; 2 T Red vinegar, or other vinegar; 2 T Extra virgin olive oil Salt and pepper
