Red Velvet Sandwich Cookies - BelGioioso Cheese

Ingredients

• 1 1/2 cups + 2 Tbsp. whole wheat white flour
• 2 Tbsp. unsweetened cocoa powder
• 1 tsp. baking soda
• 1/4 tsp. salt
• 5 Tbsp. unsalted butter, softened
• 3/4 cup light brown sugar
• 2 eggs
• 2 tsp. vanilla extract
• 1 1/2 Tbsp. milk
• 1 Tbsp. + 2 tsp. natural red gel food coloring
• 1 1/4 cups cold heavy whipping cream
• 1/2 cup powdered sugar
• 8 oz. BelGioioso Mascarpone cheese, take out of fridge 15 minutes before use
