  • 3 tablespoons granulated sugar or malt syrup
  • 3 tablespoons Bartenura Olive Oil, vegetable oil, or melted shortening
  • 4 teaspoons table salt or 2 tablespoons Haddar Kosher Salt
  • 4 cups (26 ounces/760 grams) durum flour or fine (not granular) semolina flour
  • about 2 cups (10 ounces/285 grams) unbleached all-purpose flour
