A mildly spiced Beef Curry with Apricots. Serve with boiled basmati rice, seasoned with Schwartz Pilau Rice Seasoning to make a great Indian meal.

- 1 medium onion, chopped
- 2 tbsp Curry Powder Mild
- 450 ml (¾ pint) beef stock
- 2 tbsp crunchy peanut butter
- ¼ tsp Sea Salt
- 175 g (6 oz) dried apricots, chopped
- 75 g (3 oz) creamed coconut, crumbled
