  • 2.2 lb loin of pork (skin on, scored (rack of pork, leg pork also work))
  • 2 quarts boiling water
  • 1/4 cup salt
  • 1/4 cup apple cider vinegar
  • 2 tsp black pepper, ground
  • 1 tsp fennel seeds
  • 2 tbsp sage, fresh (finely chopped (or rosemary))
  • 1/2 nutmeg, grated (grated)
  • 2 tbsp olive oil
  • 2 onion, brown (unpeeled, quartered)
  • 1 head garlic (halved, crossways)
  • 2 bay leaf
  • 4 carrot (large)
  • 1/2 cup dry white wine
  • 1 cup chicken stock
