Sardines on a Mediterranean Salad

Ingredients

• 1 c Sun dried tomatoes
• 2 Green capsicum
• 6 Artichoke hearts pre oil
• 2 c olive oil
• 24 Sardines filleted & with salt and pepper
• 1/2 c olive oil
• Salt and pepper
• 150 g Butter
• 2 Spanish onions
• 2 Red capsicum
• 3/4 c Black olives stones removed
• 2 Lemons cut into wedges
• 1 c Plain flour
• 1 Continental cucumber sliced and de-seeded
• 100 ml Balsamic vinegar
