A flavour filled pita, best enjoyed fresh from the oven with a glass of red wine.
Ingredients
- 3 leeks, white only, finely sliced
- 2 shallots, peeled, finely sliced
- 4 cloves garlic, peeled, finely sliced
- 6 free range eggs
- 240g goats' cheese, crumbled
- 50g coriander seeds, toasted and crushed
- 16 sheets Antoniou filo pastry
- 150mL ghee or clarified butter
- GC extra virgin olive oil
- Salt and pepper
- Icing sugar to dust
