Brian Taylor - Eggplant Stacks

Ingredients

• 1 cup of pesto
• 2 large eggplants
• 1 tbsp olive oil
• 1 onion, diced
• 3 cloves garlic, chopped
• 3.5 cups sliced Roma tomatoes (about 7)
• 2 tbsp fresh chopped basil
• 0.5 tsp salt
• 0.25 tsp pepper
• 1 cup fresh ricotta cheese
• 0.25 cup Parmesan cheese
• sprigs of fresh herbs such as thyme, oregano, and tarragon for garnish
