Mexican Street Corn Salad – Fustini's Oils & Vinegars

Ingredients

• 1 lb frozen corn
• 2 tablespoons Fustinis Cilantro and Onion olive oil
• 1/3 cup red onion, small dice
• 1 tablespoon Fustinis Persian Lime olive oil
• 1/3 cup mayonnaise
• 1/3 cup cotija cheese, crumbled small (if you can’t find cotija, use feta)
• 2 tablespoons cilantro, chopped
• 1 teaspoon Fustini's Alderwood Smoked salt
• 2 tablespoons chili powder
