- 2 cups honey
- 1 cup low-sodium soy sauce
- ¼ cup coconut sugar
- 3 tbsp. ground ginger

- 1 tsp. freshly ground white pepper

- 3 slabs St. Louis–style ribs

- Juice of 2 or 3 limes (¼ cup)

- 4½ oz. jicama, sliced (1 cup)
- ¼ medium red bell pepper, seeded and cut into small dice (¼ cup)

- ¼ bunch cilantro, chopped (¼ cup)
- 3 tbsp. chopped pickled ginger
- 3 limes, cut into wedges
