• 1 small Yellow Onion, finely diced
• 1-1/2 stalks of Celery, finely diced
• Small Pinch of Salt
• 1 Tbsp of Poultry Seasoning
• 1 cup of Warm Water, about 110 degrees
• 1 Tbsp of Active Dry Yeast
• 2 Tbsp of Sugar plus 1 tsp
• 4 cups of Bread Flour
• 1-1/2 tsp of Salt
• 2 Egg Yolks
• 1/4 cup of Unsalted Butter, softened to room temperature
• 1/4 cup of Milk
• Eggwash, one egg beaten with a splash of water
