Ingredients

• 1 egg yolk
• 1½ teaspoons canola oil
• 2 cups all-purpose flour, plus more for kneading
• 2 teaspoons salt, plus more for cooking
• 2 tablespoons sour cream or cream cheese
• Potato and Cheese Filling (recipe follows), cooled
• 4 tablespoons (½ stick) unsalted butter
• 2 medium baking potatoes, peeled and cut into 3-inch pieces
• 4 ounces sharp cheddar cheese, cubed (about 1¼ cups)
• 1 teaspoon salt
• ¼ teaspoon freshly ground black pepper
