Ingredients

• 6 egg yolks
• 1 cup (250 mL) granulated sugar
• 1/3 cup (75 mL) fresh lemon juice
• 2 tbsp (30 mL) lemon zest, finely grated (about 2 lemons)
• 1/2 cups (125 mL) GAY LEA - Unsalted Butter, chilled (cut into 1/8" or 3 mm pieces)
• 2 cups (500 mL) all purpose flour
• 1/2 cup (125 mL) icing sugar
• 1/2 tsp (2 mL) salt
• 1 cup (250 mL) GAY LEA - Unsalted Butter, softened*
• 3 tbsp (45 mL) lime zest, finely grated (about 4 limes)
• 1 tsp (5 mL) vanilla extract
• 20 almonds, toasted
