Ingredients

• 3 lb Eye Round Roast
• 2 Cloves of Garlic, very thinly sliced
• Fresh Rosemary
• 1/4 cup of Olive Oil
• 1/4 cup of Dry White Wine, I used Pinot Grigio
• Plenty of salt and pepper
• 2 Tbsp of Unsalted Butter
• 2 Shallots
• 1 cup of Dry Red Wine
• 1 cup of Beef Stock
• 1 cup of Sour Cream
• 2-3 Tbsp of Prepared Horseradish
• 2 Tbsp of Chopped Chives
• Plenty of Salt to taste
